二、项目建设的目的和意义
1、项目背景
  近二十年来,我国肉类工业发展迅猛,加工工艺和生产设备都有    大幅度的改进和提高。但是,中国传统腌腊肉香肠制品的加工技术却少有发展。西式肉制品的产量不断增加,对中国的传统肉制品市场构成了严重的冲击,中国传统腌腊制品的地位已岌岌可危,加速其加工技术的现代化进程已势所必然。尤其在四川、重庆等西南地区,香肠腊肉类传统食品在广大消费者中深受喜爱,具有广大的消费者体。
2、市场前景分析
  香肠具有浓郁的地方风味特,每逢佳节之际其销量呈倍增长。在重庆等西南片区,香肠销售高峰期主要集中在春节期间。其制品主要是传统的手工灌装制品,不具广泛消费性。如今休闲食品受到广泛追捧,是旅游和家居的良好选择。故将传统的佳节食品灌装香肠制作成香肠片休闲食品具有深远的销售市场,既方便食用和携带,又不失其风味,以重庆和四川两大香肠销售大省市作依托,逐渐推至南方各省市,最后走向全国消费市场。

  目前在市面上很难看到香肠类休闲食品,大多以传统休闲食品为主,在此方面存在较大的

  香肠经现代科技研究证明有确切的保健功效,安全性高.此香肠不但有社会效益而且还有很大的经济效益,从它的年经济效益估算汇总表中看出,该项目投资8000万元(其中固定资产投资5000万元,流动资产投资3000万元。)建成日产达15吨的流水线。此项目建设期为1年,投产期的第一年每日生产15吨,第二年每日生产20吨,经济效益估算附后。由此表看出财务评价经济效益是很好的,市场前景可观,投资无任何风险,同时也具有一定的社会效益。所以该项目是可行性项目。

  经详细市场调研分析,休闲类食品主要分为塑料小包装型(50g左右)、家庭大包装型(200g左右),结合地方特又可以分为川式香肠、广味香肠、羊肉香肠等。主要以小包
装型川味和广味需求量较大的香肠作为主要产品,今后再根据销售情况酌情调整。由于各季节需求量和原料供应不同,应按季节销售进行产品生产规模调整。

2、拟建规模
  项目规划总建筑面积2500平方米,其中生产厂房1000平方米,仓库800平方米,办公及宿舍等附属设施面积700平方米;项目购置烟熏炉、腌制设备、连续包装机等生产设备等;配套道路、给排水、绿化等。项目建成后,达到年产5000吨香肠片的生产能力。

一)工艺流程
1、广味香肠片的制作工艺
瘦肉切碎绞肉机绞碎    清洗(20度清水中)
肥肉切碎成1cm*3大小     
与辅料混匀浸泡肉馅        灌装刺孔(排气)封口
肠衣湿润末端打结
日晒烘烤(45-50度)切片封袋
